Le Brioche des Nos Rêves or The Brioche of Our Dreams is a collection of 60 recipes using the butter-enriched dough known as brioche.
From classic elaborations such as kougelhopf, hallah, and couronne to inspired modern delights such as blood orange and saffon loaves and an epi filled with cassis and almonds, the recipes are provided by leading French bakers, as well as author Deborah Dupont-Daguet (proprietor of Librairie Gourmand in Paris).
Measurements are scaled by weight for modest home production, and there are good photographic sequences illustrating the shaping of loaves, including braiding 4 or 5 strands. But professionals looking for good ideas will find them here as well.
