America's Test Kitchen has built its reputation dependability, but that does not mean they stick only to the most familiar choices. On the one hand, they're willing to cross genres with choices such as za'atar monkey bread or a Dutch baby with burrata and prosciutto. 

But they've also addressed more traditional fare, such as Greek spanakopita, Georgian khachapuri, and pajeon from Korea. Many recipes come with suggestions for flavor variations, and instructional photographs help with with shaping some of the more elaborate bakes.
