The Hand and Flowers Cookbook

The Hand & Flowers is the anchor of Tom Kerridge’s successful restaurant group, which also includes spots in London and Manchester. Located in an old pub in a country town in Buckinghamshire, the restaurant deftly reinterprets familiar pub fare. Worth noting: there’s a great deal of fish and seafood here.

There are takes on some familiar staples, such as fish and triple-fried chips. But more common and even more interesting are dishes sich as smoked haddock omelette; salt cod Scotch egg; spiced monkfish with roasted cauliflower and peanut crumble; beef fat brioche with English mustard butter, gem lettuce, and corned beef; and crispy pig’s head with black pudding, rhubarb, and pork crackling.

Presentation leans to the casual but tidy, and most recipes are composed of several separately prepared elements.
