We often recommend Heidi Swanson’s earlier books to cooks who are looking to eat more vegetables, regardless of whether those folks are vegetarian. Simplicity has always been a key part of their appeal, and Swanson delivers that once again in this book.
What looks good? How about a salad of mushrooms (your choice: whatever looks appealing at the market), lime and herbs? Or a hearty peanut stew with spinach and miso that ready in less than 30 minutes? You might try grilled romaine with lemon-buttermilk dressing, or a rustic focaccia that you can top with almost anything, though we’re partial to her suggested razor-thin slices of orange with olives and pine nuts.
Practical and fresh are all we often want in a cookbook and this one delivers.
