For Pati Jinich, the U.S.-Mexico border is less a dividing line than a region unto itself, shaped by generations of migration, exchange, and invention. Drawing on nearly a decade of travel and research for her PBS series La Frontera, she turns her attention to the foods that have emerged on both sides of it.

The 125 recipes resist easy distinctions between Mexican, American, and Tex-Mex cooking. There are Mashed Bean, Green Chile, and Chinese Tamales, Crispy Shrimp Taquitos, Tejano Fried Rice, and Green Spaghetti, alongside borderland barbeque, Mexicali stir-fries, Mennonite pizzas, and a smashburger taco whose roots long predate its recent social-media fame.

Jinich also traces the histories behind foods now familiar far beyond the region, including burritos, nachos, Caesar salad, and margaritas. Throughout, recipes are interwoven with the people and communities she encountered in her reporting, presenting La Frontera as a place where culinary traditions continually cross, adapt, and become something new.

Hardcover. Color photographs throughout.
