This issue is devoted to the staff of Lou, a Nashville, Tennessee restaurant located in a converted Craftsman house down the street from a business that calls itself a piano rescue.
Para Llevar demonstrates with each issue that restaurant people have fascinatingly complex lives beyond the moments made visible by their work and service. The people of Lou are also musicians and dancers and world travelers. One lived for a time in the Arctic, another was born in Helsinki.
The approach here is not systematic; it’s episodic and shaped by character of its subjects and their interests. For some of these people, the world has clarity and for others a vision is still emerging. Anyone who has worked in a restaurant knows the range.
