One of the Cuadernos de Mugaritz series, the fourth and final volume, Las Primeras Palabras de la Cocina looks at a range of cooking and flavoring methods, from acidulation to salting, with the fresh eye which chef Andoni Luis Aduriz has been bringing to his cuisine for decades.
Each recipe, accompanied by Jose Luis Lopez de Zubiria’s soft focus, closeup photography, serves to represent a particular flavor or technique. From acidular—roasted hake with yogurt and grilled garlic—to salazon—bacalao tails in consomme with squash—with adobar, empanizar, gelificar, and oxidar in between, the high concept whimsy is counterbalanced by rigorous, fundamental cooking instruction.
