Jeffrey Alford (d. 2024) and Naomi Duguid are phenomenal cookbook authors whose wanderlust and sense of adventure led them to all corners of the world, resulting in the publication—both together and separately—of some of the most enduring books on our shelves.
Flatbreads and Flavors (1995), their first together, is a fine example of what makes their work so valuable. In fact, they say it in the introduction: Food without the depth and spice of context is “like leaving out the oven temperature or the amount of salt in the bread;” it just doesn’t work and leaves the reader underwhelmed.
Less conscientious authors might let the subject matter diminish and muddy under the weight of its breadth, but Alford and Duguid’s headnotes are alluring and insightful, making the case obvious, not confounding, that injera, naan, pancake, crepe, focaccia, pizza, khachapuri, dosa, tortilla, pita, piki, lavash, and bannock all belong in the same book. And, of course, it’s not just the breads here but their accompaniments too. A highly rewarding book worthy of any collection.
