Taking cues from community cookbook publishing, the Navy’s USS Semmes (DDG-18) published their own book in 1966.
Drawing its recipes from official Navy sources (and including the recipe card numbers for easy reference), Dare to Excel in Cooking aims to feed a hungry crowd systematically, heartily, and nutritiously, as commanding officer David F. Emerson says in his introduction, “It is no secret that a well-fed ship is a good ship.” Every yield is intended for 24–25 and specifies the appropriate serving size. You’ll be making 2 gallons of oysters jambalaya; 6 fried chickens for ¼ bird servings; baked rice milanese for ¾ c each; etc.
Recipes for soups, salads, meats, dairy, vegetables, beverages, and desserts are included. There is also guidance on how to scale up the recipes for an even larger crew.
This copy is the second printing from the same year of publication, 1966, when the ship was on its second tour in the Mediterranean. Staple bound paperback. Though clean and unmarked inside, the paper wrappers are lightly soiled, toning, and bear about a one-inch tear at the base of the spine hinge.
