There is an argument to be made that the sign of a truly excellent chef is the respect and care they have for humble produce. April Bloomfield is a fine example of one who might be better known for her meat and seafood offerings but whose vegetable dishes are the ones that sing.
Bloomfield’s second cookbook, A Girl and Her Greens (2015), is a clear demonstration of her mastery of the craft. Though coming from a fine dining background, the recipes are oriented toward the home cook who will be duly rewarded for following Bloomfield’s lead. There are low-effort, high-reward dishes like hasselback potatoes with lardo and rosemary or projects with a heavier lift like swiss chard cannelloni (with homemade pasta, of course) which will not only hone your talents as a cook but result in a spectacular meal as well.
