The swaggering title is partly playful, but Meherwan Irani has a serious goal: to make Indian cooking something home cooks reach for regularly rather than approach with trepidation. The Asheville-based James Beard Award-winning chef behind Chai Pani and Botiwalla pushes against rigid notions of authenticity, presenting Indian food as a living cuisine shaped by regional differences, migration, exchange, and constant adaptation. 

More than 100 recipes roam across India, from bhel puri, vada pav, pakoras, and desi Chinese dishes to roadside cooking and family favorites. There’s his grandmother’s two-lentil dal, his mother’s dhansak, and the Sloppy Jai, Irani’s lamb kheema sandwich inspired by the sloppy Joe. Essays explore subjects including chai, curry, and why naan isn’t the universal accompaniment many diners assume it to be. 

Throughout, Irani encourages home cooks to take shortcuts, make substitutions, learn from mistakes, and become comfortable cooking by instinct. The result is less a definitive encyclopedia of Indian food than an exuberant invitation to start cooking it.
