This fun and funky mushroom cookbook helps support the Fungi Foundation, the world’s first NGO dedicated to fungi conservation and education. It's the work of Smallhold, an enterprise that grows mushrooms locally almost anywhere it can, from bars to grocery stores to a Lower East Side girls' club.

Boldly designed and photographed, Mushrooms in the Middle features 10 recipes from figures in the mushroom community and interested chefs, including Fungi Foundation founder and first female mycologist of non-lichenized fungi in Chile, Giuliana Furci.

These are not the same old, same old mushroom recipes, unless you've long been making and consuming shiitake bloody Marys, mushroom bulaklak with spicy vinegar sauce (these Filipino street treats are typically made with pork rinds), or salted caramel-shiitake mousse.

Attractively printed on heavy card stock and bound with a zippy yellow plastic spiral, the book has full-color photographs throughout.
