It seems as if by Lucky Peach's third issue, the list of people clamoring to contribute had expanded beyond the downtown Manhattan culinary denizens who had dominated earlier volumes. This "Cooks and Chefs" issue includes contributions from Naomi Duguid writing about Thailand; a discourse on restaurant toilet cleanliness as practiced (or at least advocated) by Fred Morin and David McMillan of Joe Beef in Montreal; a profile of a line cook at Amundsen-Scott Station in Antarctica and another one at Arpege in Paris; and an only-slightly-fanciful look at the secret lives of famous chefs, including the revelation that Dan Barber and Thomas Keller are put out to pasture for a few weeks every spring.
