Julia is Julio Martín Baez's award-winning Buenos Aires restaurant, offering a blend of culinary styles that echoes the country's myriad cultural influences as well as his experience working in European kitchens, including at Mauro Colagreco's Mirazur in France.

The intersections are evident in nearly every elegantly plated, almost painterly composed dish. For example:

  • Asparagus with strawberries, ponzu, and sesame
  • Braised cabbage with blueberries and red onion 
  • Cavatelli puttanesca given a stronger marine element through the use of nori
  • Shiitake mushrooms with peas, pomegranate, and miso
  • Celeriac flan with dulce de leche

The recipes are arranged seasonally and most dishes are composed of multiple separately prepared elements which are assembled shortly before serving.
