Inspirations: 10 Histoires de Création en Pâtisserie
Shipping calculated at checkout
Taking inspiration from other craftspeople, French pastry chef François Daubinet presents 10 desserts that are informed by their work.
Borrowing ideas from workers as varied as a glassblower, a seamstress, a watchmaker, and a jeweler, Daubinet lets his imagination flow freely and in unexpected directions. The watchmaker, for instance, suggests to him a sort of astrolabe created in the form of a pavlova. The work of a ceramicist leads him to create a version of île flottante that masquerades as a vase.
There are explicit recipes for each of his own creations as well as profiles of the artisans who inspire him.
Hardcover. Color photographs throughout. In French.
