Francis’ Paniego’s family’s restaurant, Echaurren Tradicion, was forced to close for a time due to COVID-19 restrictions in Spain. Suddenly, instead of serving Michelin-starred food with a focus on the finest ingredients from the Rioja region, Paniego was cooking for his family using everyday ingredients.
His Instagram feed and Youtube videos highlighting his home kitchen ideas proved to be such a hit that this fun and practical book was brought to market quickly. Some of the dishes are adaptations of items from the menus of Echaurren, but others are smart uses of pantry staples, such as caramelized peppers with potatoes and poached eggs, or gingered chicken wings.
Paniego’s books always seem to have short lives and we suspect that this fun little souvenir will suffer a similar fate. But of the many reactions to lockdowns and quarantines, this is one of the most enjoyable.
