In this conversation, three of the city's most influential restaurateurs come together to explore what it means to steward an iconic institution while shaping the future of New York dining.
Niki Russ Federman of the century-old Russ & Daughters, Chintan Pandya of Semma and Dhamaka, and Wilson Tang of Nom Wah discuss the histories behind their restaurants, the traditions they preserve, the innovations they embrace, and how they continue to define what it means to eat in New York.
Moderated by James Beard Award-winning food and culture writer Joshua David Stein—who co-authored cookbooks with both Federman (Russ & Daughters: 100 years of Appetizing) and Tang (The Nom Wah Cookbook) and is the co-author of Pandya's forthcoming cookbook—this conversation offers a rare opportunity to hear from the people behind three restaurants that have become essential to the city's culinary landscape.
