The Garuharu team seeks to please those looking for more out of their choux than the familiar (but delicious!) chocolate glaze and pastry cream in their book, Eclair. The book begins with helpful recipes regarding eclair basics, including a gluten-free option, before moving on to over 20 recipes highlighting the potential of the pastry.
Recipes showcase some classic flavors like those of the Mont Blanc and Tiramisu desserts but also provide step by step instruction and photography for some more modern interpretations. Ever wanted to eat a Mojito at tea time? You can eat your tea too! Earl Grey eclairs begin a chapter focusing on aroma.
There's a lot to love and learn about the singular pastry and a few of its cousins in Eclair, but it seems clear that it's as much about inspiration as replication and the authors make every effort to show us that eclairs are every inch a canvas as much as they are a pastry.
The book is in Korean and English. While the translations are not fully idiomatic, any experienced kitchen worker will have no trouble understanding the instructions.
