Despite a subtitle that makes it sound as if this book simply checks some boxes on a list, this is a pleasingly adventurous collection of recipes that offers plenty of attractive dishes that a weeknight cook might select, regardless of of dietary or time restrictions.
In the rice noodles section, for instance, Bittman offers a choice of seared beef with rice vermicelli; wide noodles with tempeh and warm kimchi; and pad thai with crisp and spicy soft shell crab. In stews, you have your choice of beef stew with baked potatoes; osso buco; and bean and parsnip stew with oregano pistou. Throughout the book, Bittman displays a versatility that should inspire anyone who's thinking that they just don't know what to make for dinner this week.
