This collection of one-dish meals happens to be vegetarian, but we can easily imagine most meat eaters being happy with the inviting choices offered by Volger, a Brooklyn cooking teacher, purveyor of veggie burgers, and editorial director of Jarry magazine. For example, ramen redolent of freshly made kimchi, shiitake mushrooms, and aromatic seasonal greens. Or a bowl of broccoli, potatoes, zucchini, and mixed grains enlivened with a vibrant green sauce inspired by a Laurie Colwin recipe. Perhaps even a dish of chickpea potstickers given a boost by smoked paprika and pickled shallots. Lots of great choices.
