Elsass, born and raised in New Hampshire, almost has maple syrup in his blood. And it is not surprising that New England standards have a strong presence in his book, with examples such as maple and root beer baked beans and maple-roasted Boston butt. But he is not afraid to range more widely for inspiration either, offering crispy delicata squash with maple-tomato chutney and even a maple-sage daiquiri for bringing a taste of summer into a wintry night.
