The stretch of coastline where Provence meets Liguria has always maintained its own culinary language, distinct from both the French and Italian traditions it borders. France-raised Mélanie Masarin presents here a series of dishes shaped the region’s seasonality and preference for simplicity.
Her recipes emphasize straightforward preparation and a limited number of components, with dishes such as fish in parchment paper, almond biscotti, and daube Provençale. There are some expedient contributions to improvisational entertaining, including a grated tomato carpaccio and some mozzarella tossed with tender greens, fresh peas, and olive oil.
Masarin is the founder of a non-alcoholic drinks line, so it makes sense that aperitif foods and light drinks are also included, reflecting the rhythms of coastal meals that move between casual gatherings and more structured occasions.
