So what the heck is fine dining anyway? As this issue of the line-crossing, expectation-flouting, all-around-good-time magazine Lucky Peach makes clear, there’s a lot of disagreement about that. Also up for dispute: is fine dining important? Do people still want to experience it? Is service as integral to it as cuisine? And just about anything else industry types can argue about.

But to give credit where it’s due, the editors have an impressive array of heavy hitters weighing in on various aspects, including Will Guidara of Eleven Madison Park, Christopher Kostow of The Restaurant and Meadowood, Dominique Crenn of Atelier Crenn, Iñaki Aizpitarte of Le Chateaubriand, André Soltner of the legendary Lutèce, Anita Lo of Anissa, and Rosio Sanchez of Hija de Sanchez. This is about as serious as the magazine has gotten, but there are plenty of diversions, including a timeline of fine dining’s evolution and highlights of some of its greatest dishes through history.

Color photographs and illustrations. Paper. Although unused, these copies show minimal shelfwear.
