The Victory Garden Cookbook (1982) was the print companion of the PBS TV show of the same name. On the show, Marian Morash was the on-air cooking counterpart to host James Crockett whose focus was gardening. Morash became the primary host after Crockett’s passing in 1979.
The cookbook, even with all the wonderful vegetable cookery books available today, still stands out with its thoughtful breadth of recipes. Organized by primary ingredient, each vegetable receives equal and impressive treatment with options from simple and homey to adventurous and showy.
You’ll find expected dishes like corn chowder, scalloped potatoes, or zucchini cake. But there are also ample surprises like a raw celeriac salad marinated in a tuna and anchovy dressing and Jerusalem artichoke chiffon pie. A great way to kick your vegetable cooking up a notch!
