Ecaterina Paraschiv-Poirson, chef and owner of the Paris restaurant Ibrik Kitchen, presents a generous introduction to the flavors of the Balkans, a culinary landscape shaped by centuries of migration, trade, and shared traditions. Drawing on her Romanian and Greek heritage, Paraschiv gathers one hundred recipes that reflect the region's convivial style of cooking.

The book reveals the character of Balkan tables: small meze-style dishes, soups and stews, grilled meats and vegetables, breads, pickles, and sweets. Familiar preparations such as stuffed peppers, chicken goulash, and moussaka appear alongside dishes like grilled trout with Jerusalem artichoke mousseline, and a variety of fermented vegetables that anchor many Balkan meals.
