The British culinary journal The Gourmand begins a series of books dedicated to single ingredients with one of the most symbolic: the egg.

The book is extensively illustrated with historic and specially commissioned art: you will find a photograph of alabaster eggs from Tutankhamen's tomb, a painting by Cezanne and another by Dali, and stills from movies. There are essays as well, exploring topics as varied as eggs in film and music lore, ovophobia, feminist symbolism, and hangover cures.

There are also recipes. Like the essays, they are unattributed, the familiar suddenly enlivened by the unexpected. Egg salad sandwiches are succeeded by quail egg arancini. Eggs Benedict are pronounced "the iconic New York breakfast," to the surprise of at least one New Yorker.

But for anyone who delights in eggs, there are many discoveries and pleasures herein.

Hardcover. Color photographs throughout.
