The Washington State University Bread Lab has become a touchstone for bakers around the world, thanks to its work breeding grain varieties that require fewer chemical inputs, adapt to diverse climates, and offer stronger nutritional profiles. In the wake of significant funding cuts, this small format book was created to support to the Lab and the broader grain community it sustains.

Through interviews with seed scientists, farmers, millers, bakers, and organizers, the volume traces Washington’s grain economy from field trials to bakery menus. Essays, reflections on specific grains such as rye, recipes, paintings, and poems together form a portrait of a regional food system built on collaboration and research.

All funds raised from our sales of this 115 page edition, printed on recycled paper with copper metallic ink on kraft covers, will go to the Bread Lab.
