This collection has been gathered by the team at ItaliaSquisita, the YouTube channel, magazine, and website dedicated to professional Italian culinary practice. Most of the selections focus on well-known classics, such as sfogliatella, baci di dama, torta della nonna, and panna cotta.

But there are imaginative flourishes, such a plated dessert called Bianco delle Dolomiti featuring elderflower ice cream and milk foam from Norbert Niederklopfer, a "pastry taco" from the Hotel Hassler in Rome, and a blanc mange flavored with Sichuan pepper and mandarin orange from Ristorante al Pagliaccio, also in Rome.
