In April 2024, Alexandre Gauthier relocated his two-Michelin-starred restaurant La Grenouillère from Normandy to an abandoned auto garage in Paris’s eighth arrondissement. What began as a practical response to flooding became something else entirely: a week-long exploration of cuisine as total experience: spatial, theatrical, and sensory, staged in collaboration with theater director Julien Gosselin.
Diners moved through the building’s levels before reaching the dining room, the meal unfolding as performance as much as service. This book documents that event, but it is not merely commemorative. Through photography, plans, essays, and a substantial conversation between chef and director, it examines how gastronomy can intersect with contemporary art and staging.
Recipes from the April 6-10 services are included, presented in quantities scaled for a 50-cover service, alongside drawings and texts that situate Gauthier’s work within today’s culinary landscape. Printed on varied papers and thoughtfully designed, the volume mirrors the layered nature of the event itself.
