Several hundred pages later, a dessert of beet gel, purple shiso, hibiscus and lavender is closely followed by sourdough ice cream with sherry vinegar meringue.
The book’s oversize format allows the presentation photography to shine, and running commentary from the Rocas explains their sources of imagination, which are manifold, from trips to China to childhood toys.
