Published quarterly, Apicius is a Spanish-English bilingual journal dedicated to the craft and culture of haute cuisine. Each issue profiles influential chefs from around the world—most often from Spain—and pairs thoughtful commentary with striking photography that captures their most refined plated dishes.

This issue focuses on two restaurants: Paco Pérez's Miramar on the Catalan coast, literally across the sidewalk from the Mediterranean, and Venta Moncalvillo in the mountainside town of Daroca de Rioja, where chef Ignacio Echapresto and his brother Carlos preside over the kitchen and dining room respectively. Each restaurant has two Michelin stars.
