Teochew in Singapore are descendants of immigrants from southeast China, many of whom arrived there in the middle of the nineteenth century. Besides the usual Teochew fare of steamed fish and pork wrapped in bean curd skin, this book features many little-known traditional Teochew dishes—some even exclusive to the author’s family.
