In their own words "The Preserve Journal is an independent print magazine dedicated to the exploration of a more sustainable, resilient, and responsible food culture. With it we wish to invite our readers to look beyond the bite of food on their fork, and to see the whole picture of their meal and their role in it."
Contributors address this mission in a variety of circumstances and from many different perspectives. For instance, this issue includes a conversation with Danish baker and miller Jørn Ussing Larsen, tributes to mead and to tomatoes, an interview with Professor TJ Demos, who imagines a future without the agricultural legacies of capitalism and colonialism, and an exploration of using heathlands for grazing and foraging.
As a sign that The Preserve Journal takes its readers' possible interests seriously, many article are accompanied by endnotes and suggestions for further reading.
