Christensen, a Danish food writer who has profiled many of the world's leading restaurants and serves on the jury for the San Pellegrino World's 50 Best Restaurants list, here presents 25 establishments chosen from that list of 50 which he and a panel of six other contributors feel are the most distinctive. The book contains no recipes, although pictures of plated dishes abound. Essays by the contributors make passionate arguments for why they have ordered their choices differently from the San Pellegrino list. Among the restaurants whose work we have not previously seen in books are Central in Lima, Mani in São Paulo, Piazza Duomo in Alba, and Waku Ghin in Singapore. Beautiful photography.
