The beloved Loaves & Fishes cookshop on Long Island’s East End pays tribute to local farms and seasonal produce in these books from a 12-volume set of smart, stylish, handsomely photographed clothbound series.
Loaves & Fishes proprietor Sybille van Kempen—who opened the original store alongside her mother, the legendary Anna Pump—worked with local chef Licia Kassim Householder to showcase spring vegetables such as asparagus, baby spinach, baby bok choy, and wild arugula. The vegetables are part of the bounty from a farm created by one-time wine merchant Paulette Satur and her husband, Eberhard Muller, former chef at such restaurants as Le Bernardin, Lutece, and Bayard. Muller has contributed several recipes to the book, including green asparagus with hollandaise sauce, jambon de Paris, and new potatoes; roasted Montauk monkfish with braised spring vegetables and herbs; and scaloppine Milanese with wild arugula and homemade pickles.
Handsomely packaged, almost like little gift books (just under 8 inches square and 72 pages long), the Loaves & Fishes Farm Series volumes are strongly evocative of both time and place and likely to become well used in seasonal kitchens and year-round.
