Typically with PPC, this is where we would say something along the lines of "Some of the world’s most adventurous food historians contribute to this thrice-yearly journal of articles, book reviews, and excerpts from works in progress." however, this special issue is entirely devoted to a new translation of a text whose title is translated, for simplicities sake, to A Baghdad Cookery Book, also known as The Book of Dishes.

The Book of Dishes is a thirteenth century text attributed to Muhammad b, al-Hasan Muhammad b. Al Karim, the scribe of Baghdad, sometimes referred to as al Baghdadi. This work was translated anew by Charles Perry, who corrects a number of errors and misreadings of the 1930's translation of the work and is a useful and interesting text for anyone curious about the nature of 13th century cuisine of the region.
