Lauren Ko’s strikingly gorgeous pies and tarts made her Instagram account (@lokokitchen) a sensation. Here, in Pieometry, she reveals many of her secrets.
More than twenty different doughs (some for particular flavors, others for particular colors) underlie the collection of recipes here. The baked goods themselves are often as adventurous in flavor as they are in design: miso and white carrot filling rests inside black sesame pie dough; chocolate matcha shortbread crust is filled with sweetened cream cheese and fresh sliced plums; tomatillo and short rib filling is encased in a spinach pie dough; blueberry mint curd is paired with a speculoos cookie crust.
For many of the more adventurous designs, Ko provides detailed process photography, sometimes as many as a dozen photos, to help you be confident that you’re assembling something that will be a gorgeous as her own creations.
