Xavier Netry, the Paris-based baker behind Boulangerie Utopie and winner of the 2024 Grand Prix de la Baguette, is known for his imaginative approach to breadmaking, including an award-winning sourdough fed with lemon and banana.

In this collection of 40 recipes (including 11 sweet), he blends European traditions with global influences and a flair for bold flavor.

Most of the breads here begin with wheat flour, though spelt, buckwheat, and rye also appear. Classic flavors are updated—buckwheat bread with figs and poppy seeds, olive and feta with herbes de Provence—but there are more surprising combinations as well: a Caribbean-style focaccia spiked with fiery sauce chien, a cucumber and sesame loaf inspired by Guyanese flavors, and a strawberry-basil summer bread.
