City Bakery opened near NYC’s Union Square in 1990 to great acclaim—one of the first of a new generation of artisan bakeries that combined culinary imagination with a return to using the highest quality ingredients. It was a great loss to long-time regulars when the bakery closed in 2019.

Book of Tarts (1995), remarkably Rubin’s only book, is devoted to one of his signature items: tarts inspired by classic French models but using fresh combinations of flavors similar to those for which Pierre Hermé was just becoming famous in Paris. We might mention champagne-soaked peaches with vanilla sugar; passion fruit curd with raspberry preserves; white chocolate infused with pear skins. 

We are pleased to offer this compact (8.5” x 9.25”) and handsomely designed, Very Good second printing with Very Good dust jacket. A great resource for inspiration and for practical use, both for professionals and home cooks, this will be a lasting treasure.
