Although preserving methods such as canning and salt curing are explained in full detail, Barrow doesn’t spend much time on the basic recipes easily found elsewhere: she’s interested in exploring the likes of caramel pear preserves, juniper pickled cocktail onions, and whole smoked chickens. So even if you have a few preserving books already, you may find more than enough here to re-kindle your enthusiasm.
