The intersection between traditional Indian fare and other, largely Western, cuisines is given an appealing perspective in this handsome and refreshingly uncomplicated book. Pathak, whose grandparents founded the Patak’s line of curry pastes and sauces, draws deftly on a wide culinary range to offer popular standards like chicken tikka masala as well as imaginative new ideas that include a green bean salad with roasted fennel, mint, and garlic. A cooling green apple and yogurt relish pays tribute to a raita but also works as a salad dressing. Zippy and full of great ideas.
