Pathak, whose grandparents founded the Patak’s line of curry pastes and sauces, draws deftly on a wide culinary range to offer popular standards like chicken tikka masala as well as imaginative new ideas that include a green bean salad with roasted fennel, mint, and garlic. A cooling green apple and yogurt relish pays tribute to a raita but also works as a salad dressing. Zippy and full of great ideas.
