Erisbelia Garriga, born in Aguadilla, Puerto Rico, completed her graduate studies in New York before working as an educator and administrator here in the city. A cook since childhood, she gathered recipes from family cooks she admired, as well as generous friends. With an eye to adapting them to modern kitchens and schedules, she tested and refined them for this book. In the cases of beloved but sometimes intimidating recipes, such as pasteles, she provides step-by-step photo sequences to aid in assembling them.
