Galette!: Sweet and Savory Recipes as Easy as Pie

If the precision required for most baking recipes has been a turn off for you, consider the versatile, improvisation-friendly galette.
Rustic in appearance with a free-form shape, galettes can be made from a dough you pull from the freezer, roll out, and top with fruits, chocolate, or vegetables. As food blogger Rebecca Firkser says, “Run out of peaches? Make up the difference with those cherries in the back of your freezer. Toss in extra cinnamon (or what the hell, swap in cardamom if that sounds better). Go ahead and use grapefruit juice when the recipe calls for lemon.”
Firkser offers plenty of recipes, including for crusts, and lots of encouragement to suit yourself with variations. But if you’re inclined to follow a recipe, even if just for the first time you make something, consider the likes of:
-
Sharp cheddar and apple
-
Jammy grape
-
Cocoa and toasted pecan
-
Spicy eggplant parm
-
Smoky cabbage and chorizo
An appealing way to get out of a baking rut.
