A former pastry chef at Fergus Henderson's St. John restaurant, Lillie O'Brien opened <a href="http://www.londonboroughofjam.com/about.html">London Borough of Jam</a> in 2011, a small shop where she pairs seasonal fruits with remarkable flavors. Strictly speaking, her products are not all jams, or even jellies, conserves, preserves, or marmalades. But they are arrestingly appealing. Arranging her recipes seasonally, O'Brien offers an assortment of adventurous recipes with choices such as rhubarb, pistachio & orange blossom jam; blackberry and cocoa nib jam; roasted yellow peach and fennel jam; plum and tomato leaf jam; kumquat and brandy marmelade; sloe & celery leaf gin; cherry blossom syrup; pink elderflower and sage vinegar.
