This is an elegant showcase for the work of Antonio Guida, whose Michelin 2-star restaurant adorns the Mandarin Oriental Hotel in Milan, Italy. It offers a crisp, clean look at contemporary Italian fine dining in the country's wealthiest and most cosmopolitan city.
Guida, whose career has included stints in Asia as well as elsewhere in Europe, employs modern techniques even as he is making reference to traditional Italian fare, as with his curdled milk gnocchi served with rabbit and mussels. Or sweetbreads with bagna cauda, kidney and caviar. There's a surprising amount of seafood here for a restaurant 75 miles or so from the sea, along with healthy amounts of game. The dessert section is also a substantial part of the book.
