Overseeing L'Atelier Barcelona, a pastry shop and school in the Catalonian capital, Eric Ortuno has developed a wealth of recipes for small treats, from crisp simple cookies to more elaborate delights verging on petits fours.
Offering both sweet and savory recipes, he presents classic items such as amaretti and sables alongside more elaborate and inventive ones of his own devising. A tender cocoa cookie dough enfolds a gianduja filling; crispy grissini are flavored with sesame seeds and kimchi; "pina colada tacos" use delicate wafers to envelope rum, pineapple, and coconut fillings in thin, elegant layers.
