Published twice a year, Nez explores the world around us via our sense of smell. It provides an insight into the vital role that olfactory sensations play in our lives. This novel approach encompasses art, literature, science, history, food, and perfume. While a large proportion of each issue is obviously given over to fragrance and perfumery, the relationship between scent and taste is inescapably part of the magazine as well.
This issue, as suggested by the title, engages with the passing of time. Articles explore both the seasonality of smells and the interplay of smell and nostalgia over the course of one's lifetime. An article discussing scent and the 19th century city will pique the interest of those interested in food politics, while a deep dive into fermentation more deeply engages with how the tastes and flavors of fermented food are created. A brief story on the paintings of Edward Hopper is a delight.
The overall topic of this issue has a lot of kinship with discussions of flavor analysis currently en vogue within the wine and spirits world, and would add depth for any spirits professional looking to think more deeply within that context.
