Nez #13: Near or Far

Published twice a year, Nez explores the world around us via our sense of smell. It provides an insight into the vital role that olfactory sensations play in our lives. This novel approach encompasses art, literature, science, history, food, and perfume. While a large proportion of each issue is obviously given over to fragrance and perfumery, the relationship between scent and taste is inescapably part of the magazine as well.

Near or Far is the theme of this issue, which explores in part the role aromas play in our sense of immediacy and proximity.  Among the specific compounds discussed is ethyl maltol which smells of caramel and praline and combines with strawberries, coffee, and caramel. For those who find the aroma of anise polarizing may—or may not—be pleased to learn that the qualities of green anise and star anise can be very different.
