We're excited once more to have copies signed by Chef Ferran Adrià for this new volume in the Bullipedia series. We know you Adrià completionists are out there and we're here to help you.
Yes, Italian breakfast seems a surprising subject, even for this adventurous series of fascinating and thoughtful books. But research support from Italian coffee giant Lavazza, which has worked with the Adrià brothers often over the years, explains why Italy is the launching point for a discussion of breakfast.
More so than any other book in the Bullipedia series to date, at least those translated into English, Italian Breakfast is written with entrepreneurs and restaurateurs in mind. Sections address everything from what kind of service might be offered, how a breakfast space might be laid out, and how breakfast might be offered differently in a restaurant versus a hotel.
Throughout the book there are essays by and interviews with various hospitality professionals about understanding how guests experience breakfast and what they might expect in different circumstances, from fine dining establishments to takeaway bars.
Hardcover. Color photographs throughout. In English.
