Renaming the historic establishment and turning it into a symbol of French gastronomy, Loiseau earned international acclaim for his dedication to clarity of flavor, traditional technique, and a personal style that resisted culinary trend-chasing.
His death in 2003, following a series of critical reviews, shocked the culinary world and brought renewed attention to the pressures placed on chefs at the highest level.
The restaurant has continued to operate under the direction of his wife Dominique Loiseau and, more recently, chefs Patrick Bertron and Louis-Philippe Vigilant. The recipes presented here reflect that continuity. While unmistakably modern in presentation, they maintain Loiseau’s focus on precision and classical French ingredients.
Dishes include warm foie gras with cherries, dill, and red pepper; grilled lobster with pressed vegetables and coral vinaigrette; and veal sweetbreads with celery, chestnut flakes, and edible flowers.
With a preface by Dominique Loiseau and a personal tribute by author and filmmaker Philippe Labro, the book also features archival photographs of Loiseau in the kitchen, dining room, and garden—often in the company of fellow chefs such as Paul Bocuse, Guy Savoy, and Pierre Troisgros, or with public figures including Catherine Deneuve and François Mitterrand.
